Vegan Fried Rice

One of my all time favorite quick lunch recipes. It can be just so diverse depending on what ingredients you fancy. Do you fancy tofu? Perfect, go for it. Do you fancy carrots over a bell pepper. Great, because there are no rules in what you can chop in or not. Once you have the ingredients it is just so easy to make it. Pro tip: Cook more rice and make more sauce at once and keep n the fridge. The only thing you have to worry about now is the fresh stuff.

ingredients for one

  • 100g rice of choice
  • 200g vegetables of choice

    for the sauce

  • 3 tbsp mushroom sauce
  • 1 tbsp soy sauce
  • 1 tsp white wine or rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp sriracha
  • 1 tbsp mirin
  • 1 tbsp of oil

instructions

  1. Cook the rice according to the package instructions.
  2. Meanwhile, fry your choice of vegetables with a tablespoon of olive oil in a pan on high heat for a couple of minutes.
  3. Add harder vegetables first and softer vegetables a bit later. If using tofu, consider frying it separately to make it extra crispy.
  4. Add your cooked rice and sauce to the pan, letting everything cook for a few more minutes so the sauce thickens.
  5. Assemble the dish with a bunch of cilantro leaves if you like them.
